Party Size Bean Dip
Start by rinsing and cleaning beans, removing debris also remove all unwanted beans. I go the extra mile cleaning mines. So, this is what I do to assure myself my beans are clean. After rinsing and cleaning, I place the 4 cups of pinto beans into a pot that can hold at least 16 cups of water.
4 cups of cleaned pinto beans into your pot. Boil at high heat for a light boil for no longer than 15 minutes. Then dump into a strainer, rinse in sink with hot water.
After rinsing the beans, return beans to clean pot then add:
- 8 cups of water
- 1 tbsp of butter [butter is optional]
- 1 full pack of Juanita’s gravy mix
Boil at medium/high heat for 2 hours [you must occasionally stir] do not let them scorch.
After 2 hours of boiling just turn off your heat completely and let stand for 5 mins. You shouldn’t have to drain off any liquid. All you need to do now is to transfer into a container that can hole your bean amount to be whipped with a hand mixer/beater. As you mix / mash add your last ingredients.
1 ½ tbsp of Juanita’s regular seasoning
½ tbsp of Juanita’s spicy seasoning
Now just mix to your liking then served. Good with salsa, cheese, and sour cream.
Smaller batches- don’t need to add Juanita’s regular nor spicy seasoning. The gravy mix will do the job to the taste!
Pressure Cooked /Stove Top Chili
- 1 bag [16oz/1lbs] kidney beans light or dark rinse well and remove all debris
- 8 cups of hot water in pressure cooker
- 1 tbsp of grease
- 1 tbsp of butter
- 3 tbsp of Juanita’s regular seasoning
- 1 tsp of Juanita’s spicy seasoning
- 1 tsp of chili powder
Set pressure cooker for 45 minutes
While beans are cooking in pressure cooker you should be browning ground beef
3 to 4 pounds of ground beef [70/30]. Cooked into bite size pieces [no seasoning]
Doing something different optional
Not even salt! After the meat is done, drain then you need a 10 qt potto pour it into
That pot alone with 1 cup of chili’s thick & chunky {medium} salsa
5 cups of hot water, placed on stove at low heat until needed, [no seasoning yet until
You taste your beans that were cooked in pressure cooker
Using the stove top now, you need a 16qt pot to finish cooking in.
Meanwhile your beans are about to come to its 45 minutes pressure cooking time.
Remove your ground meat/salsa turn off and remove from stove. Drain & rinse. Now pour in your 16qt pot, then after pressure is released off your pressure
Pour the beans and juice into your 16 qt pot with the ground meat and salsa as well.
- 2 tbsp of chili powder
- ¼ Tbsp of cumin
- 1 tsp of mustard
- 1 tsp of Juanita’s spicy seasoning
- 3 Tbsp of Juanita’s regular seasoning
1 ¼ hour to finish cooking down at low/medium heat 140- 160 degrees
I always add some cheese in my bowl to give me that last hit of salt!

American Fried Potatoes For 3
- 4 nice size potatoes- cut 1 inch thick each
- 5 cups of water
- 1 tbsp Juanita’s spicy seasoning
- 3 tbsp Juanita’s regular seasoning
Boil at high temp. Till soft [but not falling apart] 15 mins should do.
Onions are optional. You can sauté some on the side with Juanita’s regular seasoning, or slice ½ or whole onion to place into the bottom of your pan of potatoes.
After boiling for 15mins or potatoes soft, turn heat/fire off let potatoes stay
In seasoned water for 5 more minutes. Then drain and lay potatoes out single file [not on top of each other] very lightly sprinkle our regular seasoning over just 1 side of the laid-out potatoes.
If you have a cast iron skillet this would be perfect, if not no worries.
3 tbsp of grease or olive oil of your choice in warm pan med/high heat.
Place onions in now if desired, if not just place potatoes in.
Turn as needed and cook till medium brown.
Good for breakfast or anytime. Great to serve with bacon, eggs, toast, or any meat of your choice.

Mama’s Pecan Puffs
- 2 sticks of butter
- 2 cups of flour
- 2 cups of fine chopped pecans
- Powdered sugar
- 3 tbsp of regular sugar
- 1 tsp of real vanilla
[mix these items in this order]
Butter, sugar, flour, vanilla, and last your pecans. Mix these ingredients well.
After mixing, roll mixture into small balls and place on a non-stick cooking sheet.
Bake at 325 degrees for 20 to 30 minutes or till light brown then remove from oven.
For best results while puffs are hot roll in white powdered sugar but be careful!
You can roll puffs after they cool down as well. You should get about 40 puffs.

Cooking Lamb
Clean lamb meat with water
Rub the whole lamb with olive oil
Generously season the lamb with Juanita’s regular seasoning.
For best results let stand in refrigerator for 1 to 3 days [marinade]
Optional- before you place it into the oven, cut small cuts into your lamb and insert small pieces of garlic cloves
Now turn your oven to broil, then place lamb in your bottom or top depending on what type of over you have. Bottom line your lamb must be right under the heat for 5 minutes each side. Then remove and reset oven temperature to 325 degrees.
After temp. Drops down to needed 325 degrees wrap your lamb in tin foil then place in pan cook for 1 hour temperature must be 135 to 140. 20 minutes per pound cooking time. Well – done @155temp. To 165 degrees @ 30mins per pound.

Fried Chicken, Fish And Ribs
For best results season and let food absorb for 3 days {marinate}
Good for all meats
Clean and remove all the yellow film from leg area.
Optional {remove skin}
Generously season all parts of your chicken
Then flour your chicken, remove extra flour before placing it in hot grease.
The flour can be seasoned with our regular seasoning or use unseasoned flour.
At 365 degrees to 375 deg oil should be before placing chicken in.
Fry until golden brown or done whichever first.
Minimum internal temperature of 165 Fahrenheit good to eat, chicken breast 180f.

Picnic Size Red Beans Recipe
For best results soak red beans overnight!
You need a pot that can hold up to at least 7 quarts of hot liquid
2 pounds of light or dark kidney beans. Bags of beans comes in 1 lb bags.
48oz box or pack of sausages of your choice, sausage must be dice and boiled
With your cleaned red beans at med/high for 30 minutes without seasoning.
After 30 mins of boiling, pour off and rinse off beans & sausages.
In a 7 quart pot needed to be sure of no overflow.
- 5 quarts of hot water
- 2 tbsp of fresh grease [this is optional but recommended]
- 12 tbsp of taste of Juanita’s regular seasoning
- 1 tbsp of taste of Juanita’s spicy seasoning
Whisking well before add beans and sausage.
Cook at low/medium heat 1 hour or as needed till beans are tender.
Note if beans were not soaked overnight, beans will need to cook longer
To accomplish tenderness, meaning 1 hour will not be long enough cooking.

Quick Tasting Chicken And Dumpling
1 can of biscuits of your choice of brand
Open biscuits and make them into small round balls no bigger than a quarter.
Cook them regularly. Use biscuit instructions if needed. You may need to turn biscuit ball while cooking to brown all around. After this process is finished place biscuit balls to the side, these are your dumplings.
- 7 pounds of cleaned cut / dice [nickel size no bigger than a quarter] boil this in our regular seasoning until tender.
- 4 cups of chicken stock
- 2 chopped onions [raw or grilled]
- 2 tbsp of taste of Juanita’s regular seasoning
- 1 can of cream of celery
- 1 can of cream of chicken
- {3} 1 tbsp of Juanita’s spicy seasoning
- 1 beaten egg
- ¼ cup of milk
Mix all together well, then add your biscuit balls into the mixture mix well again.
Place into a casserole to be cooked at 350 deg. For 30 to 45 minutes

Quick Tasting Spaghetti
½ Or 1 box of spaghetti boiled with butter or grease to keep from clunking together.
You also need to place 2 tbsp of Juanita’s regular seasoning in your water.
Your choice of items below to use 1 {36oz} I recommend
- {2} 24oz or 26oz pasta sauce
- {1} 6oz can of tomatoes paste [but only use ½ {half} of this paste]
- 2 tbsp of Juanita regular seasoning
- 1 tbsp of Italian seasoning
- 1 tbsp of oregano leaves
Your decision on the amount of cooked spaghetti pasta to add into your sauce.
Add Taste of Juanita’s regular seasoning to taste if more needed.
Heat low/medium for 20 to 30 minutes.
