Cooking 2 Rabbits
Start by rinsing and cleaning beans, removing debris, also removing all unwanted hairs. I go the extra mile cleaning mine. So, this is what I do to assure myself that my rabbit is clean. After rinsing and cleaning I place the 2 rabbits into a pot that can hole at least 16 cups of water.
6 cups of hot water into your pot.
Boil at high heat for a light boil for no longer than 15 minutes.
Then dump into a strainer rinse in the sink with hot water.
After boiling rabbits for 15 mins, return rabbits to clean pot then add:
- 8 cups of water
- 1 Tbsp of butter [butter is optional]
- 1/2 pack of Juanita’s gravy mix
- 1 Tbsp of Juanita’s regular seasoning
Taste seasoned water, add more regular seasoning if needed.
Boil at medium/high heat for 2 hours or until tender [you must occasionally stir] do not let them scorch..
After 2 hours of boiling just turn off your heat completely and let stand for 5 mins. Then drain off any liquid. Now I’ll give you 2 different directions you can do
- Use the left-over gravy which should be half. Just follow gravy directions for ½ pack amount. After making gravy, place your rabbit into the gravy
- Generously season rabbit with Juanita’s hot seasoning [marinade for 3 days]. Then fry with your choice of cornmeal or flour.
