Start by rinsing and cleaning beans, removing debris also remove all unwanted beans. I go the extra mile cleaning mines. So, this is what I do to assure myself my beans are clean. After rinsing and cleaning, I place the 4 cups of pinto beans into a pot that can hold at least 16 cups of water.
4 cups of cleaned pinto beans into your pot. Boil at high heat for a light boil for no longer than 15 minutes. Then dump into a strainer, rinse in sink with hot water.
After rinsing the beans, return beans to clean pot then add:
- 8 cups of water
- 1 tbsp of butter [butter is optional]
- 1 full pack of Juanita’s gravy mix
Boil at medium/high heat for 2 hours [you must occasionally stir] do not let them scorch.
After 2 hours of boiling just turn off your heat completely and let stand for 5 mins. You shouldn’t have to drain off any liquid. All you need to do now is to transfer into a container that can hole your bean amount to be whipped with a hand mixer/beater. As you mix / mash add your last ingredients.
1 ½ tbsp of Juanita’s regular seasoning
½ tbsp of Juanita’s spicy seasoning
Now just mix to your liking then served. Good with salsa, cheese, and sour cream.
Smaller batches- don’t need to add Juanita’s regular nor spicy seasoning. The gravy mix will do the job to the taste!
