I’m not going to get into how to skin clean or how to remove sweat glands
Portioning the meat. Separate the legs, halves of the ribcage, and the spine into separate cuts.
Optional, but recommended
Vinegar soak [white vinegar]
Submerge the meat in white vinegar for 1 night or 2!
Then drain and rinse all the meat parts.
You can use a pressure cooker, boil, bake or use a slow cooker!
Using pressure cooker
- 8 hot cups of water
- 2 medium potatoes diced 1-inch in cubes
- 1 large chopped onion
- 1tbsp of Juanita’s spicy seasoning
- 2 tbsp of Juanita’s regular seasoning
Mix and taste seasoned water, add more Juanita’s regular seasoning to taste.
Now add raccoon in pressure cooker, cook for 30 minutes or until tender.
Baking at 325 for 1 ½ hour time will vary depending on how old and size of coon.
Same ingredients as above with the option of adding some celery and sweet potatoes.
Same ingredients for boiling and slow cooker.
